- Research indicates that sugar makes coffee taste good because it causes the bitter caffeine molecules to clump together, which reduces their prominence.
- According to lead author of the study at York University, Dr Seishi Shimizu, when molecules stick together, they cover less surface area and the tastebuds find it harder to “pick up” their taste.
- The research has been published in ‘Food and Function’.
